Dutch Oven Minestrone Soup

Ready to make the best minestrone soup to guarantee you gather the family around the table without making a mess in the kitchen?

Here’s what you need:

  • 4 full size carrots (chopped)

  • 2 medium zuchinnis (chopped)

  • 1 yellow onion (chopped)

  • 6 celery sticks (chopped)

  • 4 cloves crushed garlic

  • 2 tbsp. olive oil

  • italian seasoning

  • 1 lb can diced tomatoes

  • 2 - 15 oz cans kidney beans

  • 4 cups vegetable broth

  • water (as needed to make it liquidy)

  • 1 cup noodles of your choice

Here’s how to make it:

  • chop all vegetables listed above

  • heat olive oil in dutch oven (medium/low heat)

  • throw in all vegetables at the same time, wait for them to simmer a bit

  • add in italian seasoning (and any other seasoning of choice)

  • dump in can of diced tomatoes

  • dump in kidney beans

  • pour in vegetable broth (and extra water)

  • let it all simmer (at least 1 hour - the longer the better)

  • throw in noodles 15 minutes before you’re ready to eat
