Dutch Oven Minestrone Soup
Ready to make the best minestrone soup to guarantee you gather the family around the table without making a mess in the kitchen?
Here’s what you need:
4 full size carrots (chopped)
2 medium zuchinnis (chopped)
1 yellow onion (chopped)
6 celery sticks (chopped)
4 cloves crushed garlic
2 tbsp. olive oil
italian seasoning
1 lb can diced tomatoes
2 - 15 oz cans kidney beans
4 cups vegetable broth
water (as needed to make it liquidy)
1 cup noodles of your choice
Here’s how to make it:
chop all vegetables listed above
heat olive oil in dutch oven (medium/low heat)
throw in all vegetables at the same time, wait for them to simmer a bit
add in italian seasoning (and any other seasoning of choice)
dump in can of diced tomatoes
dump in kidney beans
pour in vegetable broth (and extra water)
let it all simmer (at least 1 hour - the longer the better)
throw in noodles 15 minutes before you’re ready to eat
